What is the difference between dating and seeing someone? Is it exclusive? How often should you call?

I am recently divorced and have gone out on 5 dates with someone. Our last one we slept together and it was a little awkward but it was the first time but after wards he was so sweet, caressing my chest, back, thighs and legs. Playing with my hair. We have great chemistry and always have lots of fun when we hang out but he clearly does not want to label this. I just don't want to see like a tramp, and I don't want to be a fool either. He says we are seeing each other exclusively but he has trouble picking up the phone. I know his job is demanding but a little text saying hello just wanted to send you a hello message goes a long way. Any advise out there?
